Recommended for Saison, farmhouse ale, dry Belgian pale.

Character: Fruity, spicy and peppery; dry farmhouse finish.

A diastaticus strain that attenuates to 86 to 94%, far past a normal ale yeast, which is what gives saison its bone-dry finish. Because it ferments maltotriose and dextrins a normal strain leaves behind, never pitch it near a beer or piece of equipment you want to keep low-attenuating; cross-contamination will dry out the next batch.
