For a dry, spicy saison, LalBrew Belle Saison is the target strain. As a diastaticus yeast it attenuates 86 to 94%, giving the bone-dry farmhouse finish, and it throws the pepper and fruit the style is known for when fermented warm.

Let it run hot, up to 30 C or more, or it can stall partway and leave the beer sweet and under-attenuated. Keep it away from equipment you use for low-attenuation beers, because it ferments sugars other strains leave behind.
