Dry brewing and wine yeast strains differ in temperature range, attenuation, alcohol tolerance and flocculation, and those numbers decide whether a strain finishes your beer, cider or wine the way you want. Pick a strain to see its published manufacturer data, or look up a substitute for a strain your shop is out of.

Strain data is compiled from the manufacturer technical data sheets published by Lallemand (LalBrew and Lalvin), Fermentis (SafAle, SafLager) and independent brewing references, cited per page. Equivalence and substitution relationships are drawn from manufacturer strain histories and documented side-by-side comparisons.

Every temperature, attenuation, alcohol-tolerance and flocculation figure on this site is quoted from the manufacturer technical data sheet cited on that page. Manufacturers revise data sheets, and real fermentation depends on pitch rate, wort or must gravity, nutrient level and temperature control, so treat published attenuation and alcohol tolerance as typical figures, not guarantees. Substitute strains are close matches, not identical clones, and can shift the final flavour.
