Recommended for Saison, farmhouse ale, dry Belgian pale.

Character: Fruity, floral and phenolic with a very dry character.

A diastaticus saison strain that finishes at 89 to 93% attenuation, close to bone dry. It is the dry-yeast answer to a Dupont-style saison and needs a warm ferment to express its pepper and floral phenol. Because it ferments dextrins a normal ale strain leaves behind, keep it off equipment used for low-attenuation beers.
