BE-134, Belle Saison and M29 are all high-attenuation diastaticus saison strains, so any is a genuine substitute for a dry farmhouse ale.
They all finish very dry, but temperature matters: Belle Saison and M29 want a hot ferment up to 30 C or more, while BE-134 expresses well a little cooler. Give any of them heat and time, because a saison strain that cools mid-ferment stalls sweet.
