Recommended for Belgian abbey ale, dubbel, strong Belgian ale, Trappist-style ale.

Character: Fruity and lightly spicy Belgian character with a dry finish.

A high-attenuating abbey strain, formerly sold as Abbaye. It finishes drier than most Belgian yeasts and tolerates a strong wort, so it suits big abbey and Trappist-style beers where you want the sugar mostly gone but the Belgian esters kept. It ferments fast, so control temperature early to keep the spice in check.
