Notes
Both are phenolic Belgian strains, but BE-256 attenuates high at 82 to 86% and finishes dry, while T-58 stops around 72 to 78% and keeps body.
Choose BE-256 for a strong, dry abbey or dubbel where the sugar should be mostly gone.
Choose T-58 for a softer, sweeter Belgian ale with intense banana and clove.
