BE-256 and LalBrew Abbaye are both high-attenuating dry abbey strains, so they are true substitutes for a strong Belgian ale.
Both tolerate a strong wort and finish dry with Belgian spice and fruit. T-58 is a fallback but stops higher at 72 to 78%, so it leaves more body; use Abbaye when you want the same dry, strong abbey finish that BE-256 gives.
