Character: Classic Dupont spicy, peppery saison; notorious for stalling if it cools.
The Saison Dupont strain, the classic peppery farmhouse yeast, but notorious for stalling at around 1.035 and needing a hot ferment, up to 35 C, to push through to a dry finish. Give it heat and patience and it makes the definitive saison; let it cool and it leaves a sweet, stuck beer.
