A dedicated malt whisky distilling strain that ferments the full sugar spectrum of a malted-barley mash and holds up to 15% alcohol by volume, so it takes a wash to strength cleanly before distillation. Unlike a beer yeast, it is selected for the fruity congener profile a whisky wants rather than a finished beer flavour. It is a distilling yeast, not a brewing one; use it for a wash headed for the still.
