Recommended for Traditional mead, melomel, high-alcohol mead.

Character: Ferments honey cleanly to high alcohol while preserving character.

A mead strain that tolerates 18% alcohol and ferments honey close to dry while preserving more of its delicate character than a champagne strain. That high tolerance lets it finish a strong sack mead. Feed it nutrient in stages, because honey is low in the nitrogen a healthy ferment needs.
