For a mead, Mangrove Jack's M05 Mead is a specialist pick. It tolerates 18% alcohol, enough for a strong sack mead, and ferments honey close to dry while keeping more delicate character than a champagne strain.

Honey is low in nitrogen, so add yeast nutrient in stages during the ferment. Skipping nutrient is the usual cause of a stuck or sulphurous mead.
