Character: Ferments apple to a crisp dry finish while keeping fruit character.
A dedicated cider strain that takes apple juice to a crisp 95 to 100% dry finish while keeping more fresh fruit aroma than a neutral wine yeast. It tolerates 12% alcohol, plenty for cider and apple wine, and settles hard for a clear pour. Ferment cooler to hold onto the apple character.
