For a crisp dry cider, Mangrove Jack's M02 Cider is the dedicated pick. It ferments apple juice to a 95 to 100% dry finish while keeping more fresh fruit aroma than a neutral wine yeast, and tolerates 12% alcohol for an apple wine.
Ferment cooler to hold onto the apple character. For a sweeter cider, ferment dry then back-sweeten and stabilise, because this strain will take almost all the sugar.
