Choosing a clean American ale yeast

For a clean American ale that lets malt and hops lead, the Chico strain is the default, sold as US-05, Wyeast 1056 and White Labs WLP001.

Why clean matters here

American pale ales and IPAs are built around hop aroma and a clean malt base. The yeast's job is to get out of the way, fermenting reliably without adding fruity esters or spicy phenolics that would muddy the hops. A neutral, high-attenuating strain delivers exactly that, finishing the beer dry enough to keep it crisp and letting the aroma additions take centre stage.

This is the opposite of a Belgian or wheat yeast, which is chosen precisely because it adds its own loud character.

The Chico strain and its forms

The go-to is the Chico strain, available as dried US-05 from Fermentis, liquid Wyeast 1056 and liquid White Labs WLP001. All three are the same clean, high-attenuating yeast with a lower to medium flocculation. US-05 is the convenient default for its shelf life and pitch-and-go simplicity, while the liquid pair suit brewers who prefer liquid handling.

Because they are one strain in three formats, you can pick whichever your shop has without changing the beer.

Getting the most from it

Keep the fermentation in the strain's comfortable ale range to preserve the clean profile, since running it hot invites the very esters you are trying to avoid. Give the beer time or a cold crash to clear, because flocculation is only moderate. Pitch a healthy amount so fermentation starts cleanly and finishes dry.
