Notes
For a clean German Pilsner or helles, SafLager W-34/70 is the reference strain, the Weihenstephan 34/70. Low esters and low higher alcohols give the neutral base a delicate lager needs, and it attenuates 80 to 84%.
It needs cold fermentation in the 12 to 18 C band and temperature control. Pitched warm like an ale it will throw the fruit and sulphur a lager should not have.
