Notes
As a neutral, high-tolerance rescue and sparkling strain, EC-1118's nearest substitute is another bayanus champagne yeast such as Lalvin DV10.
The reason to reach for EC-1118 is its 18% alcohol tolerance and vigour for restarting stuck ferments; DV10 matches that tolerance and is even more forgiving of cold and low pH. A standard ale or bread yeast is not a valid swap here, it will quit well before the sugar is gone.
