Simcoe is a high-alpha pine-and-passion-fruit dual-purpose hop; Amarillo is a softer orange, apricot and melon aroma hop with less bitterness.
Choose Simcoe for resinous pine bitterness and aroma in a West Coast beer.
Choose Amarillo for a gentler stone-fruit and citrus aroma over a separate bittering charge.
