Notes
For a dry wheat-beer strain, Munich Classic and Mangrove Jack's M20 are the usual substitutes because all three are phenolic wheat yeasts.
They match on the clove-and-banana wheat character, but WB-06 attenuates much higher at 86 to 90% and finishes crisp, while M20 stops around 70 to 75% and leaves more body. Expect a fuller, slightly sweeter weissbier if you swap to M20.
