SafAle WB-06 substitute: what to use instead

SafAle WB-06 (Fermentis)

If you cannot get SafAle WB-06, this is the closest replacement and what changes.

Close, with a caveat. LalBrew Munich Classic, or Mangrove Jack's M20 Bavarian Wheat is the nearest substitute for SafAle WB-06, but it will not match on every point.

Notes

For a dry wheat-beer strain, Munich Classic and Mangrove Jack's M20 are the usual substitutes because all three are phenolic wheat yeasts.

They match on the clove-and-banana wheat character, but WB-06 attenuates much higher at 86 to 90% and finishes crisp, while M20 stops around 70 to 75% and leaves more body. Expect a fuller, slightly sweeter weissbier if you swap to M20.
