Character: Tart, slightly phenolic witbier character; alcohol tolerant.
A witbier strain, tart and slightly phenolic with more alcohol tolerance than most wit yeasts, so it can push a stronger Belgian white. Medium flocculation clears it better than a pure wit strain. Ferment warm to lift the spice.
