Character: Malty and slightly ester; tolerates high gravity and higher temperatures.
The Scottish ale strain, malty and high-flocculating with a 12% alcohol tolerance, which is why it is the classic wee heavy and Scotch ale yeast and doubles as an imperial stout strain. It ferments clean cool for a malty beer and can take a wide temperature range. Its high tolerance suits a big, strong, malt-forward beer.
