Recommended for Kölsch, Belgian wit, session ale, hoppy ale.
Character: Subtle, floral and balanced fruity character; forms a large firm head.
A German ale strain best known for Kölsch. It is fairly neutral with a light floral fruit and famously builds a huge, firm head, so leave headspace in the fermenter. It stays in suspension and drops slowly, so give it time or fine before packaging a delicate pale beer.
