For a Kölsch, SafAle K-97 is the dry pick. It ferments as an ale but stays clean and delicate, and a cold-conditioning period after fermentation gives it the lager-like crispness the style needs.

It builds a huge firm krausen, so leave plenty of headspace and expect a slow drop. Keep it cool; a warm K-97 ferment throws ester a Kölsch should not have.
