Both are phenolic wheat strains, but WB-06 finishes crisp at 86 to 90% while M20 stops around 70 to 75% and leaves a fuller, slightly sweeter body.
Choose WB-06 for a drier, crisper wheat beer.
Choose M20 for a rounder, more classically cloudy weissbier with more body.
