About Galaxy

Galaxy is an Australian hop released in 2009, notable for one of the highest oil contents of any variety, which drives its powerful passionfruit and peach aroma.

It is a favourite for hazy and fruit-forward IPAs. Because it is grown only in Australia, supply can be tight and prices high.

Aroma and flavour

Very intense passionfruit, peach, and citrus; one of the most fruit-forward hops grown anywhere.

By the numbers, Galaxy typically carries 11 to 16% alpha acid, which drives its bitterness, and 2 to 4 total oil, which drives its aroma. It is generally treated as a aroma hop. Published figures are typical values; the real alpha and oil of any given lot vary with the harvest, so a hop bill is usually adjusted to the actual numbers on the package.

Using it in the brewery

Galaxy is used almost entirely late, in whirlpool and dry hop, where its intense tropical aroma comes through. A little goes a long way given its high oil.

Like all hops, it is best bought as vacuum-packed pellets and kept cold and sealed, since oxygen and warmth degrade the alpha acids and drive off the aroma oils over time. Buy close to when you will brew, and store any opened packets cold and airtight.

Substitutes

If Galaxy is unavailable, Citra and Mosaic make the closest substitute, sharing a similar aroma family and a comparable alpha and oil profile. A substitute is a close match rather than an identical clone, so expect it to shift the character a little.
