For a big red such as Syrah or Zinfandel, Lalvin ICV D254 is a strong pick. It builds a round, full mid-palate and lifts jammy, spicy fruit, giving weight to a ripe red.

It has a higher nitrogen demand and can throw hydrogen sulphide if starved, so stage in nutrient. Do not let it run out of nutrients late in a high-sugar ferment.
